“I thought about you”

I grew up in the town of Leiden in the Netherlands, a romantic city complete with canals, a fortress in the middle and beautiful farming grounds surrounding the city. When I was 23, I was slowly falling in love with food and I wanted to make a connection with it every day, so I decided to learn the art of pastry from the famous Adriaan van Haarlem (former chef at Huize van Wely, Guardian of the Pastry Arts). From then on, food became my passion. I moved from a traditional bakery to hotels to restaurants.

At a certain point I created an amazing opportunity: to work at Eleven Madison Park in New York. This restaurant, having 3 stars Michelin, 4 New York Times stars, (now) the best in the San Pellegrino World’s 50 Best list and a Relais & Châteaux restaurant, was a great opportunity for me to completely master the skills of restaurant pastries and desserts.
